We’re Peter and Alex—two friends brought together by a shared love of great food, good drinks, and creating places where people feel at home. Together with Fred and Marisa—the legends behind this spot—we’re carrying more than 50 years of pizza tradition into a new chapter for Niles.

Peter is a physician who grew up in the restaurant world and has always loved hospitality.  Alex has over 15 years in hospitality, with a passion for espresso and cocktails.  Trained as a barista in Greece, he knows his coffee—from the perfect freddo to a smooth espresso martini. 

Marisa, of Italian descent and fluent in Italian, comes from a family where pizza is in the DNA—her parents created Chicago Stuffed Pizza.  She’s been part of this location from the beginning and remains the heart of our classic pizzas.

And then there’s Fred. Not Italian by heritage, but you’d never guess it from the way he works the dough. Funny, charismatic, and incredibly skilled, Fred brings both exceptional pizza and plenty of laughter to the kitchen.

Our pizzas are made from scratch with homemade dough, freshly shredded mozzarella, and ingredients prepped in-house daily. From our signature stuffed pies to our classic thin crust, every pizza is hand-crafted with tradition, precision, and care—the kind that brings people together and keeps them coming back.

But we don’t stop at pizza. Our smashburgers are made with fresh ground chuck, never frozen, seasoned on the grill and cooked to order for the perfect crispy edge and juicy center. Each one is served on a soft lightly toasted brioche bun—because the details matter.

Our wings are big, meaty, and seriously satisfying. We oven-roast them for tenderness, then flash-fry them for that crave-worthy crisp finish.  And our dill ranch dressing is homemade.
